Candied Pecan Banana Bread

                             
Well, what can we say?  We're totally bananas for this twist on a classic! 
Upgrade your banana bread by replacing ordinary nuts with our delightful candied pecans.  It's a simple swap that delivers a rich, buttery nut flavor.  Then, really give your tastebuds a treat by topping with creamed honey and more candied pecans. Use your favorite banana bread recipe or try one of our favorite recipes (shown below) from James Beard's Beard on Bread

For the bread:

¼ cup butter

½ cup granulated sugar

½ cup honey (we substituted creamed honey)

2 eggs

1 ½ cup mashed, very ripe bananas 

1 ½ cups all-purpose flour

½ tsp baking soda

½ tsp salt

½ cup crushed candied pecans

For the top:

¼ cup creamed honey (or as much as desired)

¼ cup crushed candied pecans (or as much as desired)

Cream the butter with a wooden spoon. Add the sugar and honey and beat until creamy and light. Add the eggs, one at a time, then thoroughly mix in the bananas. Sift together the flour, baking soda and salt and blend thoroughly into the mixture. Finally, fold in the pecans.

Butter a 12 x 4 ½ x 2 ½” loaf pan and pour in the batter. Bake at 350 degrees for 1 hour, or until knife inserted in the center comes out clean.

Once cooled, top loaf with creamed honey and candied pecans.
